What kind of differences does this find?

It compares the text on each page and highlights words that were added or removed. It does not compare visual layout, images, fonts, or formatting — just the text content.

What if the two PDFs have a different number of pages?

Any page that only exists in one document is shown as fully added or fully removed, and the comparison continues matching the remaining pages by page number.

Does it match pages by content or just by page number?

By page number — page 3 of Document A is compared against page 3 of Document B. If pages were inserted or removed partway through one document, everything after that point may appear more different than it really is, since the page numbers no longer line up.

Are my files uploaded to a server?

No. Both files are read and compared entirely in your browser — nothing is sent anywhere.
